Whole lemons quartered and buried in salt, then left alone for weeks while the skin softens and the juice turns thick and dark.
Only after that does the masala go in. The one pickle in the house that genuinely improves with age — a two-year-old jar of nimbu achar is worth more than a new one.

How to eat it, how to keep it
Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.
Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.
Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
