Kachi keri cut into pieces big enough to bite, with whole fenugreek that swells in the oil and turns soft.

Made in one short window each summer when the raw mangoes come in hard and sour. It sits for a few weeks before it is ready, and keeps getting better through the year — the fenugreek is what gives it that slight bitterness at the back.

How to eat it, how to keep it

Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.

Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.

Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
