The jar most houses keep open on the table. Five or six vegetables cut small so you get something different in every spoon, held together with crushed mustard and a mustard-oil base.

How to eat it, how to keep it

Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.

Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.

Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
