Every clove is peeled by hand — there is no shortcut, and it is the reason this jar takes the longest to make.
The garlic is cooked slowly in masala until the sharpness goes and what is left is soft, sweet and amber-coloured. People who say they do not like garlic pickle usually have not had it made this way.

How to eat it, how to keep it
Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.
Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.
Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
