Gunda — lasoda, if that is what your family calls it — has to be picked while it is still firm, and the window for that is about three weeks.

De-seeded, blanched, then pickled with raw mango so the two sournesses sit against each other. Crunchy in a way no other pickle is. Every year it goes before the season ends.

How to eat it, how to keep it

Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.

Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.

Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
