Rajasthani green chilli chopped fine, mixed with fennel and turmeric, ready in a few days rather than a few weeks.
Brighter and more direct than the red chilli pickle — this one tastes of the chilli itself, not of the oil it has been sitting in. Good with anything fried, and with curd.

How to eat it, how to keep it
Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.
Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.
Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
