Thick red chillies, slit down one side and packed with a coarse mustard and saunf filling, then left in oil until the skin gives way.

Hot, but the kind of heat that arrives after the flavour rather than instead of it. One chilli next to a paratha is usually enough.

How to eat it, how to keep it

Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.

Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.

Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
