Bilona means the whole milk is set into curd first, churned by hand into makkhan, and only then simmered into ghee. It is slower and it takes far more milk, which is why most ghee on a shelf is not made this way.

How to eat it, how to keep it

Good with dal-roti, paratha, khichdi and curd rice. A spoon is plenty — this is not a sabzi.

Always use a dry spoon. Water in the jar is the one thing that will spoil a preservative-free achar. Keep the oil covering the pickle; if the top looks dry, tilt the jar so the oil runs back over.

Oil going cloudy or setting in winter is normal. So is the colour deepening over the year.
